Cheese Scones

Super quick and easy to whip up, these scones make a tasty lunch - fresh and warm out of the oven, with a little butter and maybe a salad on the side. If you choose to use self-raising flour, just make sure you leave out the baking powder. You could also swap 1 cup of flour for wholemeal flour to add some extra nutrition. Works fine with gluten free flour too.

Ingredients

2 cups flour
2 teaspoons baking powder
1 teaspoon sugar
1/2 teaspoon salt
pinch cayenne pepper (optional)
2 cups grated tasty cheese
1 cup milk

Method

Sift the flour, baking powder, sugar, salt and cayenne pepper (if using) into a bowl. Mix in the grated cheese. 
Make a well in the center and pour in the milk. Mix lightly until just combined together.
Turn out onto a floured bench and shape into a rectangle about 3 cm high. Cut into 8 pieces. Put onto a lined or greased tray and bake at 220°C for 15-20 minutes until golden.

Variations

You can add other ingredients such as ham or tomato to the mix - add at the same time as the cheese. A bit of chopped spring onion or parsley is nice too. You could also try a little mustard instead of the cayenne pepper. Or swap out the cheese for some dates!
